Hi Emily, using potato starch or rice flour would be a good alternative to flour for the first coating, as for the panko, I'd imagine it could be made from gluten free bread. Let us know how it goes if you try it!

Quick question: do you have recommendations on how to make this gluten free? The sauce I can definitely make gluten free, but I want to figure out the frying process. Corn starch and gluten free panko? Have you ever attempted it?
