I included everything including the umeboshi but the only modification I had to make to mine was to add a little bit of Mirin to the onion sauce since the red wine I was using ended up making it a bit more sour than I wanted. I had the right amount of sour with the umeboshi and the slight addition of sweet with the Mirin was perfect for mine. I additionally sauteed some mushrooms. It all came out great.
