Hi Dale, mirin is a nice-to-have ingredient but unfortunately most mirin sold outside of Japan is not real (they're a mix of alcohol, sugar and flavorings). Even the brewed ones often contain salt, which makes it a deal breaker for using for teriyaki due to the addition of soy sauce.
