BUTTER MOCHI

Buttery bite-sized pieces of pillowy mochi make for a delicious snack.

Mix the mochiko, sugar and 1/3 of the milk together into a paste and then whisk in the remaining milk.

Cook the mixture in a microwave oven set at 600 watts for 2:30.

Whisk the butter into the mixture until it is fully melted and emulsified. It's okay if there are some small lumps.

WHISK IN BUTTER

Finish cooking the mochi at 600 watts for 3:30.

FINISH COOKING

Knead the mochi together until it's smooth and elastic using a spatula or wet wooden paddle. 

KNEAD MOCHI

Press the butter mochi into a mold and chill in the refrigerator until cool. 

MOLD MOCHI

Cut the butter mochi into bite-sized pieces using a sharp knife and then dust with potato starch.
