Hi Susie, you could use dashi in place of the chicken soup, but for this preparation I actually prefer using chicken stock over dashi. One thing you'll want to be careful of if you're using hondashi is the amount of salt you add as the granules already include a ton of sodium (both in the form of salt and MSG).

I used to make my own dashi for miso soup with kombu and katsuobushi but now I cheat and use Hon Dashi granules. Do I need to make any other changes if I use that instead of the chicken stock?
