For the last few years this recipe has been a staple of my household. I most frequently make it with tofu, but I have also enjoyed it with salmon and mahi mahi. I do tend to add ginger, which lends a lovely fragrance and spice. I also substitute crimini mushrooms, or even white mushrooms for the enoki, since I can easily find those here. In fact, all the ingredients for this dish, besides the miso, can be picked up at a Trader Joe's, making it an easy weeknight meal.
I have literally had the thought of making this and, 20 minutes later, I'm sitting down to eat! Thank you for this delicious, craveable. easy recipe!

Hi Gw, you could, but I'm not sure why you'd want to. There are two steps to the cooking process. The first is stir-frying the veggies, which you'll either need to do on the stove, or constantly be opening and mixing the contents of the pot in the oven. The second is to to steam the salmon, which would work in the oven, which would work, but is not ideal because the way the food is stacked the heat is meant to come from below (this cooks the vegetables faster than the salmon and makes them tender while ensuring your salmon doesn't get overcooked. Overall, doing this in the oven will require more work for worse results. As for time and temperature, I haven't tried it so if you'll need to experiment to figure it out.
