I was slightly skeptical about this dish. The ingredients didn't seem to add up to much in my head. Chinese stir fry with french fries on top? But I trusted Marc's experience and enthusiasm and gave it a go.
This dish is FANTASTIC!!!
It's hard to really describe the interplay of flavors and textures here. I guess you just have to try it! The great thing is that the ingredients aren't too exotic, and the techniques are familiar and quite easy. The timing gets a bit tricky, but I think I will finish the fries first next time, then fire the stir fry. The fries were a bit hot when I plated the dish.
I double-fried my french fries, just because that's the way I always do it. I had to sub Sherry for the Pisco. This dish is so good, though, that I will have to pick up a bottle for future cooking!

Hi Eileen, sorry about that. If I don't explicitly state a marination time, you can assume it's while you prepare the rest of the ingredients (i.e. you don't need to wait). I've updated the recipe to clarify.
