Hi Penny, volumetric measurements such as cups is not a good way to measure pasta as the volume depends on the size, shape and thickness of the pasta you are using. This recipe makes enough mac and cheese to serve up to 6 people as a side dish (assuming you have a main and several other sides). If you are serving this as a main dish, it's more like 2-3 portions depending on how hungry your diners are. For reference, a box of DeCecco Elbows is 453 grams and the recommended serving size is 56g, so by this measure 250 g would be just over half of the box and about 4 servings.
