Hi Inez. You could use dashi in place of the anchovies and water, or you can just leave it out completely.

Hi Ria, it's only that neat when I'm shooting videos😆 But I do hate clutter so we built lots of storage space to put things away. Pork shoulder (butt) would work, but I might skip parboil step in that case and just go straight into the stock. You're also going to want to check it periodically and stop cooking it as soon as it's fork tender so you don't go too long and dry it out.

Besides your beautiful food (love the videos) did I tell you how IMMACULATE your kitchen is??!?😍. I have everything except the pork belly. Unfortunately, my kiddos are not fans of pork belly. They don’t care about the fat (*a.k.a. Jigglies in our 🏠). Can I use pork butt instead or should I just cut out the top fat layer after done cooking? I know lean parts like pork loin wouldn’t render much taste and would be tough)
