I miss living near Tomales Bay. I used to love raw oysters living in the Bay Area, but I've stopped eating them here in Japan. I've gotten food poisoning from them at least 3 times (probably 4). It's kinda crazy because I eat raw chicken and eggs here without issues, but the oysters here are bad news.

Fresh panko doesn't stick to the food quite as well as the dry kind, but the texture after it's been fried is waaay better, so worth the extra effort.

I was trying to find information on the panko you use. Well, here it is! I'm going to make my own next time I make a recipe that calls for them. I want the results you get! I have a box of Kikkoman Panko. Meh. They worked okay, but I want my food to be outstanding, like yours!
My husband can't stand oysters, but I love them! My MIL taught me to eat them. We used to stop in Bodega Bay and buy them on our way to the Sea Ranch. My MIL would just pop them in a hot oven and bake them until the shells opened. Easy! Sometimes we would drive to Hog Island Oyster Co. and pick them up right out of Tomales Bay.
I'm going to have to find some down here and try your method. The last time I had some in a restaurant they were off. It's been enough years ago that the taste memory has faded..
