Thanks Jess! That method of putting a cast iron pan over the chicken is lower effort, but the problem with it is that chicken legs are inherently lumpy, so there are always bits of skin that don't crisp. This method fixes that problem by allowing you to target individual areas so the skin crisps evenly.

I still make variations of an old recipe of yours where you weigh down the chicken with a cast iron pan, drain oil and flip over the chicken to add the sauce.
